I love cooking healthy meals and will be showcasing easy delicious dishes that you and your family will enjoy. Having everyone involved in the preparation, cooking and clean-up of a meal will bring the family together to catch up on their day and to enjoy great conversations with the ones you love!
Since I have tested and enjoyed all the recipes that are being showcased, I have chosen the most nutritious, flavorful and easy to make for your dining pleasure. They are not time consuming and you can add in your own spin on these dishes as well. Creating something of your own is even better than the original recipe. I hope you consider making some of these delicious and healthy meals with your family.

Vegan Black Bean Brownies with Flaxseed Eggs
Like many other beans, black beans are a great source of fiber, protein and foliate. Black beans may also help reduce the spike in blood sugar that occurs after eating a meal, which may help reduce the risk of diabetes and weight gain.
This beneficial effect is because black beans have a lower glycemic index compared to many other high-carbohydrate foods. This means they cause a smaller rise in blood sugar after a meal. You will never know this recipe has black beans as the main ingredient!
Farro Risotto with Sweet Potato and Kale
There is much confusion over the true name for farro, mainly because the names above are used interchangeably in different regions and countries. The kind that’s most commonly found in the US and Europe is emmer wheat. It’s sold dry and prepared by cooking it in water until it’s soft and chewy. Farro is loved for its nutty flavor and unique, chewy texture.
It’s a great alternative to other popular grains, such as rice, quinoa, buckwheat and barley, among others.
Asian Style Chickpeas, Broccoli and Brown Rice
Chickpeas, also known as garbanzo beans, are part of the legume family. Their nutty taste and grainy texture pairs well with several other foods and ingredients. As a rich source of vitamins, minerals and fiber, chickpeas may offer a variety of health benefits, such as improving digestion, aiding weight management and reducing the risk of several diseases. Additionally, chickpeas are high in protein and make an excellent replacement for meat in vegetarian and vegan diets. Healthy alternative to take-out!
