"Dirty" Cauliflower Rice

For those of us from down south, this is not the dirty rice we grew up with. This is a much healthier version, but I can guarantee it's just as delicious! You will be blown away by realizing that it's not rice in this recipe, but cauliflower! You will even be able to fool your family, and all along they will be eating healthy vegetables! This recipe is gluten-free and Paleo.

Ingredients:

  • 1 large head cauliflower
  • 1 pound organic chicken sausage with jalapenos cut into small pieces
  • 5 green onions (scallions) sliced, chop green tops and put aside
  • 1/2 cup lacinato kale chopped (This kind of kale is so much sweeter)
  • 1/2 cup red bell pepper chopped
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon pink Himalayan salt
  • 1/2 teaspoon black pepper

Directions:

  1. "Rice" your cauliflower using a food processor to achieve consistency you prefer
  2. Heat a large pan over medium heat with 1 tablespoon olive oil
  3. Cook sausage until browned and remove from pan and set aside
  4. Add in remaining oil and cauliflower, saute until starting to look slightly golden but not brown
  5. Add onions until they become soft, add garlic, kale and peppers sauteing about 3-5 minutes
  6. Season with salt and pepper
  7. Add sausage and cook for another minute or so until all flavor are incorporated
  8. Remove from heat and toss with green tops from onions
  9. Serve and enjoy
