Avocado Chocolate Chip Cookies

These cookies are creamy, healthy and delicious. This recipe is very simple to make and the kids will love helping to make them. The secret is to make sure the avocado is very soft and beat with mixer until the mixture looks fluffy then add the butter to make it more creamy. You will be happy to give these to your family knowing they are eating healthy fats along with lots of vitamins and minerals!

Ingredients:

  • 2 1/2 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 whole very soft avocado mashed
  • 8oz or 1 stick room temperature butter
  • 1 cup brown sugar
  • 1/2 cup raw sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla
  • 1 12oz package mini dark chocolate chips

Directions:                                                                                                        

  1.  Preheat oven to 350 degreen. Line two baking sheets with parchment paper and set aside.
  2. Combine the flour, baking soda, and salt in a medium-size bowl and set aside.
  3. In another bowl, with a mixer beat the mashed avocado and butter until smooth, creamy and fluffy about 1 minute. Add the brown sugar and white sugar and mix on medium speed until fluffy and well combined.
  4. Add egg yolks one at a time, mixing well after each addition. Add vanilla.
  5. With mixer on low speed, slowly add flour mixture. Beat just until all flour is incorporated. Stir in chocolate chips.
  6. Using a teaspoon, scoop up dough into rounded mounds on prepared sheet pans, spacing mounds two inches apart. Flatten slightly with your fingertips. 
  7. Bake for 13-14 minutes until golden brown.
  8. Cool on baking sheet for 2-3 minutes then remove to wire rack to cool completely.
